Spinach Souffle

Ingredients

  • 1/2 lb. sliced bacon
  • 2 (10 oz.) pkg. frozen chopped spinach
  • 3 eggs, slightly beaten
  • 2 c. milk or 1 can evaporated milk
  • 1 tsp. salt
  • dash of nutmeg
  • 2/3 c. bread crumbs
  • 2 c. shredded Provolone or Muenster cheese
  • paprika

Directions

    Dice, fry and drain bacon.

    Thaw and drain spinach.

    Mix all ingredients, but save some cheese to garnish top of casserole. Pour into a 1 1/2-quart greased baking dish.

    Sprinkle saved cheese around edges to form a border.

    Sprinkle with paprika. Bake at least 30 minutes at 375°.

    It's done when the center is firm, not runny.

    Baking will take longer if the milk or spinach is cold.
