- 1/2 lb. sliced bacon
- 2 (10 oz.) pkg. frozen chopped spinach
- 3 eggs, slightly beaten
- 2 c. milk or 1 can evaporated milk
- 1 tsp. salt
- dash of nutmeg
- 2/3 c. bread crumbs
- 2 c. shredded Provolone or Muenster cheese
- paprika
Directions

1Dice, fry and drain bacon.

2Thaw and drain spinach.

3Mix all ingredients, but save some cheese to garnish top of casserole. Pour into a 1 1/2-quart greased baking dish.

4Sprinkle saved cheese around edges to form a border.

5Sprinkle with paprika. Bake at least 30 minutes at 375°.

6It's done when the center is firm, not runny.

7Baking will take longer if the milk or spinach is cold.
