- 1 onion, finely chopped
- 2 Tbsp. butter
- 3 Tbsp. all-purpose flour
- 2 c. milk
- 2 c. cooked spinach, well drained
- 1 c. consomme
- salt and pepper to taste
- 2 c. light cream
- 1/2 c. sherry
- 1 c. chopped toasted almonds
Directions

1Saute onion in butter until tender; remove from skillet with slotted spoon.

2Stir in flour, then milk.

3Puree spinach with consomme; add mixture to sauce.

4Add seasonings.

5Stir in cream; mix well.

6Heat just until simmering; stir in sherry.

7Sprinkle with almonds before serving.

8Yields 8 to 10 servings.
