- 2 pkg. frozen spinach
- 1/4 c. chopped onion
- 1/3 c. sifted flour
- 1 Tbsp. salt
- 1/4 c. peanut oil
- 1/4 tsp. pepper
- dash of nutmeg
- 6 c. milk
Directions

1Cook frozen chopped spinach in unsalted water according to directions and drain.

2Heat oil in large saucepan.

3Add onion and saute until transparent (5 minutes).

4Remove from heat.

5Blend in flour, salt, pepper and nutmeg.

6Stirring constantly, gradually add milk, then add spinach.

7Cook over medium-high heat (about 15 minutes).

8Stir often to prevent scorching.
