- 1 lb. spinach, washed with heavy stems removed
- 1 Tbsp. grated onion
- 2 Tbsp. flour
- 2 Tbsp. butter
- 1 c. chicken stock
- 3 c. milk
- Parmesan cheese
- nutmeg
- salt
Directions

1Bring water to boil; add spinach.

2Bring water back to boil. Remove from heat and ladle spinach from water; drain and press out moisture.

3Chop finely.

4Toss onion into flour.

5Melt butter in saucepan.

6Add onion; cook until onion wilts (2 to 3 minutes). Slowly add stock and stir constantly.

7Slowly add milk; cook until slightly thickened.

8Add spinach; reheat.

9Season with salt and a few grains of nutmeg.

10Serve with Parmesan cheese over top.
