Spinach Stuffed Onions

- 3 oz. cream cheese
- 1 egg
- 1/2 c. soft bread crumbs
- 1/4 c. milk
- 1/4 c. Parmesan cheese
- 1/4 tsp. salt
- dash of pepper
- 1 lb. chopped spinach, cooked and well drained
- 1 large onion
Directions

1Heat oven to 350°.

2Beat together cream cheese and egg until light; add crumbs, cheese, milk, salt and pepper.

3Mix well.

4Stir in spinach.

5Peel onion and cut in half crosswise.

6Separate layers and form shells (fill base with smaller onion pieces). Place in shallow 1 1/2-quart baking dish.

7Spoon spinach mixture into onion shells.

8Cover with foil and bake for 35 to 40 minutes or until shells are tender and filling is set.

9Serves 4.
