Ingredients

  • 1 small onion, diced
  • 2 (14 1/2 oz.) cans whole tomatoes (undrained)
  • 1 (6 oz.) can tomato paste
  • 1 (8 oz.) can tomato sauce
  • 2 tsp. brown sugar
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. dried whole oregano
  • 24 jumbo shells
  • 2 (10 oz.) pkg. frozen chopped spinach, thawed and drained
  • 1 (16 oz.) cottage cheese
  • 1 c. Mozzarella
  • 1/4 tsp. pepper

Directions

    Place a large saucepan over medium heat.

    Spray with cooking spray and saute onion until tender.

    Add tomatoes and next 6 ingredients and stir well.

    Bring to boil; cover and simmer for 20 minutes, stirring occasionally.

    Cook the shells and drain.
