Spinach Stuffed Shells

  • 1 (12 oz.) pkg. jumbo stuffing shells (uncooked)
  • 1 (15 oz.) carton Ricotta cheese
  • 1 egg, beaten
  • 1/2 c. grated Parmesan cheese
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 c. fresh spinach, blanched and drained
  • 1 (26 oz.) jar Classico Di Parma four cheese pasta sauce
  • 1 c. shredded Mozzarella cheese

Directions

    Prepare stuffing shells according to package directions; drain.

    Whip together Ricotta, egg, Parmesan, salt and pepper. Stir in spinach.

    Fill shells equally with cheese mixture.

    Pour half of the pasta sauce in a 9 x 13-inch dish.

    Arrange shells on sauce.

    Pour remaining sauce over shells.

    Cover; bake in a 350° oven for 25 minutes.

    Uncover and top with Mozzarella.

    Cover; return to oven 5 minutes.
