Spinach Timbales

Ingredients

  • 1 (No. 2) can or 2 1/2 c. cooked spinach
  • 1/4 c. melted butter or salad oil
  • 1/2 tsp. salt
  • few grains pepper
  • few grains nutmeg
  • 1 Tbsp. horseradish
  • 2 eggs
  • 1 c. milk

Directions

    Drain spinach; chop.

    Add butter, salt, pepper, nutmeg and horseradish.

    Beat eggs; add milk.
  4. 4
    Combine with spinach mixture. Pack in greased timbale molds, custard cups or muffin tins. Place in pan of hot water.

    Bake at 350° for approximately 45 minutes.

    Serves 4.
