Spinach With Burghul

- 2 lb. fresh spinach, washed thoroughly or 2 pkg. frozen spinach
- 1 large onion, cut into slivers
- 1 c. coarse burghul
- 1/4 c. oil
- salt and pepper to taste
Directions

1Lightly brown onion in oil.

2Add spinach, salt and pepper. Cover and cook for 5 minutes.

3Sprinkle washed burghul on top of spinach.

4Cover tightly and simmer for about 10 minutes or until burghul is tender.
