Split Pea and Rice Soup

Ingredients
- 1 cup split peas
- 3 cups water
- 2 cups onions, chopped
- 2 garlic cloves, pressed
- 14 cup olive oil
- 2 bay leaves
- 1 teaspoon ground cumin
- 12 teaspoon cinnamon
- 14 teaspoon cayenne
- 2 cups vegetable broth
- 2 teaspoons lemon juice
- 12 cup cooked rice
- salt and pepper
- fresh parsley, chopped
Directions

1Rinse peas.

2Cook in the 3 cups water (45 minutes).

3Saute onion and garlic in the olive oil.

4Add spices and saute for 5-10 more minutes.

5Set aside.

6When peas are cooked, stir in onion mixture and vegetable stock.

7Add lemon juice and rice.

8Season with salt and pepper.

9Serve topped with the fresh parsley.
