Split Pea Soup

Ingredients
- 1 lb. split green peas
- season to taste
- 2 qt. boiling water
- 3 ribs celery, chopped
- 1 large onion, chopped
- 1 meaty ham bone or 1/2 lb. diced ham
- 1 lb. carrots, peeled and cut into 1-inch pieces
- 2 c. milk
Directions

1Rinse and drain peas.

2In a large pot add boiling water, seasoning, celery, onion, ham, carrots and peas.

3Bring to a boil; reduce heat to simmer.

4Cover and cook slowly for 2 hours, stirring occasionally to keep from sticking to pot.

5After you turn off, let set for about half hour and add milk.

6Start with 1 cup and add more if consistency is not smooth.
