Split Pea Soup

Ingredients

  • 1 lb. split green peas
  • season to taste
  • 2 qt. boiling water
  • 3 ribs celery, chopped
  • 1 large onion, chopped
  • 1 meaty ham bone or 1/2 lb. diced ham
  • 1 lb. carrots, peeled and cut into 1-inch pieces
  • 2 c. milk

    Rinse and drain peas.

    In a large pot add boiling water, seasoning, celery, onion, ham, carrots and peas.

    Bring to a boil; reduce heat to simmer.

    Cover and cook slowly for 2 hours, stirring occasionally to keep from sticking to pot.

    After you turn off, let set for about half hour and add milk.

    Start with 1 cup and add more if consistency is not smooth.
