Split Pea Soup

Ingredients

  • 1 lb split peas (2 1/2 cups)
  • 3 qts water
  • 1 small ham shank
  • 1/4 t dried onions
  • 2 chicken boullion cubes
  • 1 bay leaf
  • sprinkle of pepper
  • 1 1/2 c thinly sliced carrots
  • 1 c chopped celery

Directions

    In large pot, combine peas, water, ham, onion, boullion and seasonings.

    Simmer uncovered 1 1/2 hours

    Remove ham shank, return meat to pot.

    Stir in carrots and celery. Simmer 2 1/2 hours till desired thickness.

    Makes 6-1 1/2 servings.
