Split Pea Soup

- 1 lb split peas (2 1/2 cups)
- 3 qts water
- 1 small ham shank
- 1/4 t dried onions
- 2 chicken boullion cubes
- 1 bay leaf
- sprinkle of pepper
- 1 1/2 c thinly sliced carrots
- 1 c chopped celery
Directions

1In large pot, combine peas, water, ham, onion, boullion and seasonings.

2Simmer uncovered 1 1/2 hours

3Remove ham shank, return meat to pot.

4Stir in carrots and celery. Simmer 2 1/2 hours till desired thickness.

5Makes 6-1 1/2 servings.
