Split Pea Soup

Ingredients
- 1 lb. pkg. green split peas, rinsed
- 2 qt. water
- 1 meaty ham bone
- 1 c. chopped onion
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. marjoram
- 1 c. pared, diced carrots
- 1 c. diced celery
Directions

1Combine peas and water.

2Bring to a boil, then reduce heat and simmer, uncovered, for 2 minutes.

3Turn off flame.

4Cover and let stand for 1 hour.

5Do not drain.

6Add ham bone, onion, salt, pepper and marjoram.

7Bring to a boil.

8Reduce flame and simmer, covered, for 1 1/2 hours, stirring occasionally.

9Remove meat from bone and discard the bone.

10Cut meat into small pieces.

11Add to soup along with carrots and celery.

12Cook, uncovered, simmering 30 to 40 minutes more.

13Makes 2 1/2 quarts.
