Split Pea Soup

- 2 c. dried split peas (about 1 lb.)
- 2 qt. water
- 1 ham bone
- 1/2 c. minced onion
- 1 c. minced celery
- 1 sprig parsley
- 1/4 tsp. pepper
Directions

1In large kettle, heat peas and water to boiling.

2Boil gently for 2 minutes.

3Remove from heat; cover and let stand 1 hour.

4Add remaining ingredients.

5Heat to boiling.

6Cover and simmer 2 1/2 to 3 hours or until peas are soft and mushy.

7Remove bone; trim meat from bone and add to soup.

8If you wish, thin soup with milk or water.

9Season to taste.
