Split Pea Soup

Ingredients
- 2 1/4 c. (16 oz.) green split peas
- 1 meaty ham bone (1 1/2 lb.)
- 1 1/2 c. sliced onion
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. dried marjoram, crushed
- 1 c. diced celery
- 1 c. diced carrots
Directions

1Cover green split peas with 2 quarts cold water.

2Simmer gently 2 minutes.

3Remove from heat.

4Cover and let stand 1 hour. Add ham bone, onion, salt, pepper and marjoram.

5Bring to boil. Cover, reduce heat and simmer (don't boil) 1 1/2 hours.

6Stir occasionally.

7Remove bone, just cut off meat and dice.

8Return meat to soup and add celery and carrots.

9Cook slowly uncovered 30 to 40 minutes.

10Makes 6 to 8 servings.
