Split Pea Soup

Ingredients

  • 3 lb. split peas, washed
  • 1/4 c. ham base
  • 2 carrots, finely diced
  • 1 onion, finely diced
  • roux (flour and oil paste)
  • 2 c. diced, cooked ham (optional)

Directions

    In a large pot, cover peas with water almost to top of pot. Cook on medium approximately 1 1/2 hours.

    Test for softness. Peas must be soft enough to mash.

    Add 1/4 cup ham base and mash. Thicken with roux.
