Split Pea Soup

Ingredients
- 2 1/8 c. green split peas
- meaty hambone
- 12 peppercorns
- 1/2 c. chopped onion
- 2 c. chopped celery with leaves
- 3 c. sliced carrots
- 1 c. milk
- 2 c. beef bouillon
- 6 kosher-style garlic frankfurters, sliced or you can use Polish sausage
Directions

1In large pot, soak peas in 2-quarts water overnight.

2Bring to boil in same water, reduce heat and add hambone and peppercorns. Cover and simmer for 1 hour.

3Add vegetables and simmer an additional hour.

4Remove hambone, cut meat from it, discard bone and chop meat finely.

5Press soup through food mill.

6Add chopped ham, milk, bouillon and frankfurters or sausage and simmer 20 minutes.

7Add salt, if necessary.

8Serves 10.
