Split Pea Soup

  • 6 oz. cubed ham (1 slice)
  • 2 medium onions, cut small
  • 2 cloves garlic, crushed
  • 8 c. water
  • 2 tsp. de Provence
  • 2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/4 tsp. Tabasco sauce
  • 1 lb. pkg. split peas
  • 3 Tbsp. fat

Directions

    Saute ham in 3 tablespoons fat in saucepan or pot.

    Add onions and garlic.

    Stir in water, herbs, salt, pepper, Tabasco sauce and peas.

    Bring to a boil; cover.

    Reduce heat and boil gently for 1 hour.

    Stir often.
