- 6 oz. cubed ham (1 slice)
- 2 medium onions, cut small
- 2 cloves garlic, crushed
- 8 c. water
- 2 tsp. de Provence
- 2 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. Tabasco sauce
- 1 lb. pkg. split peas
- 3 Tbsp. fat
Directions

1Saute ham in 3 tablespoons fat in saucepan or pot.

2Add onions and garlic.

3Stir in water, herbs, salt, pepper, Tabasco sauce and peas.

4Bring to a boil; cover.

5Reduce heat and boil gently for 1 hour.

6Stir often.
