Split Pea Soup

Ingredients

  • 1 pkg. Goya peas, washed
  • 5 c. water
  • 1 can College Inn chicken broth
  • 1 large onion, quartered
  • 2 medium size carrots, quartered
  • 2 large cloves garlic, peeled and halved
  • 1/2 tsp. dried thyme leaves
  • 1/2 tsp. pepper
  • 3/4 tsp. salt
  • 1 Tbsp. snipped fresh dill
  • 2 Tbsp. dry soup greens
  • 1 bay leaf

Directions

    Put all ingredients (except salt and dill) in a heavy, 4-quart pot.

    Cover and bring to a boil over high heat.

    Reduce heat and simmer 70 to 75 minutes, stirring occasionally, until split peas are soft enough to lose their shape and break down to a puree. Remove from heat.

    With back of slotted spoon or a potato masher, mash some onions and carrots to thicken the soup.

    Stir in salt and dill.

    Makes 8 cups.
