Split Pea Soup

Ingredients
- 1 pkg. Goya peas, washed
- 5 c. water
- 1 can College Inn chicken broth
- 1 large onion, quartered
- 2 medium size carrots, quartered
- 2 large cloves garlic, peeled and halved
- 1/2 tsp. dried thyme leaves
- 1/2 tsp. pepper
- 3/4 tsp. salt
- 1 Tbsp. snipped fresh dill
- 2 Tbsp. dry soup greens
- 1 bay leaf
Directions

1Put all ingredients (except salt and dill) in a heavy, 4-quart pot.

2Cover and bring to a boil over high heat.

3Reduce heat and simmer 70 to 75 minutes, stirring occasionally, until split peas are soft enough to lose their shape and break down to a puree. Remove from heat.

4With back of slotted spoon or a potato masher, mash some onions and carrots to thicken the soup.

5Stir in salt and dill.

6Makes 8 cups.
