Split Pea Soup

- 1 lb. pkg. dry green split peas
- 4 qts. water
- 1 lg. ham bone
- 3 medium potatoes, peeled, cut in pieces
- 3 carrots, peeled, cut in pieces
- 1 lg. onion, peeled, quartered
- 1 bay leaf
- salt and pepper to taste
Directions

1Soak peas overnight in water to cover; drain Place peas in Dutch oven with ham bone, potatoes, carrots, onion, bay leaf, 4 qts. water, and salt and pepper to taste.

2Cook over low heat approximately 4 hours stirring occasionally.

3Remove ham bone and bay leaf.

4Place soup in blender, blend well until smooth.

5Taste to correct seasonings.

6Reheat and serve piping hot.

7Serves 10.
