  • 1 c. dried split peas
  • 2 1/2 qt. cold water
  • 2 c. milk or water
  • 1/2 onion
  • 3 Tbsp. butter
  • 2 Tbsp. flour
  • 1 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 inch cube fat, salt pork or ham

    Soak peas several hours; drain.

    Add cold water, pork and onion.

    Simmer 3 to 4 hours; rub through sieve.

    Add butter and flour cooked together.

    Salt and pepper.

    Dilute with milk or water.
