- 1 1/4 c. cake flour
- 1 1/2 c. sugar
- 1/2 tsp. baking powder
- 6 egg whites
- 6 egg yolks
- 1/2 tsp. salt
- 1 tsp. cream of tartar
- 1/4 c. cold water
- 1 tsp. vanilla
- 1 tsp. lemon extract
Directions

1Sift together flour, only 1 cup of the sugar and baking powder.

2Separate the eggs.

3Combine egg whites, salt and cream of tartar; beat until soft mounds form, then add 1/2 cup sugar, a tablespoon at a time.

4Beat until very stiff.

5Beat egg yolks; combine with water, vanilla and lemon extract.

6Add dry ingredients to egg yolk mixture.

7Fold in egg white mixture.

8Pour into ungreased tube pan.

9Bake at 350° for 40 to 50 minutes. Cool; frost with Fluffy Icing.
