  • 2 c. milk
  • 3/4 c. cornmeal
  • 1/2 tsp. salt
  • 3 to 4 egg yolks
  • 3 to 4 egg whites
  • maple syrup

Directions

    Scald milk in top of double boiler.

    Add salt and slowly sprinkle in cornmeal, stirring constantly.

    Cook until thickened, then lower heat to low and cook 5 minutes more.

    Remove from heat and cool.

    Beat in, one at a time, 3 to 4 egg yolks.

    Beat egg whites to stiff peak.

    Fold into mush mix.

    Place in buttered casserole.

    Bake at 350° for 45 minutes, until top is golden and knife blade inserted comes clean.

    Serve immediately with butter and warm syrup.
