- 1 c. corn meal
- 1 tsp. salt
- 1 c. cold milk
- 1 1/2 c. scalded milk
- 2 Tbsp. butter
- 4 egg yolks, beaten until thick
- 4 egg whites, stiffly beaten
Directions

1Combine meal, salt and cold milk.

2Add to scalded milk.

3Cook over medium heat, stirring constantly until thick, about 5 minutes.

4Remove from heat and add butter.

5Stir a small amount of corn meal mixture into beaten egg yolks, then return to corn meal mixture.

6Mix well, fold in stiffly beaten egg whites.

7Pour into a greased 1 1/2-quart souffle dish.

8Bake, uncovered, at 350° for 50 minutes (do not open oven door).

9Serve immediately with lots of butter.
