  • 2 c. milk
  • 1/2 tsp. salt
  • 1/2 c. yellow cornmeal
  • 3 eggs, separated
  • 1/2 tsp. baking powder

Directions

    Scald milk.

    Add cornmeal and salt slowly.

    Cook until thick and smooth.

    Cool slightly.

    Add egg yolks one at at time and beat after each addition.

    Beat in baking powder.

    Fold in stiffly beaten egg whites.

    Pour into greased 2-quart casserole.

    Bake in 375° oven for about 35 minutes or until firm and crust is brown. Serve with whipped butter.
