- 1 pt. milk
- 6 Tbsp. butter or oleo
- 1 c. cornmeal
- 1 tsp. salt
- 3 eggs (at room temperature), separated
Directions

1Scald milk (do not boil).

2Stir in oleo, cornmeal and salt. Cook, stirring constantly, until cornmeal comes away from sides of pan and thickens.

3Set aside to cool until lukewarm.

4Add beaten egg yolk; mix thoroughly.

5Fold in stiffly beaten egg whites; mix gently but thoroughly.

6Pour into greased and floured 2-quart baking dish and bake at 375° for 1 hour or until top is golden brown.

7Serve immediately.

8Good side dish with pork and fresh vegetables.
