  • 5-58 ounces, weight Canned Sprats In Oil
  • 2 teaspoons Butter (soft But Not Melted)
  • 1 Tablespoon Lemon Juice
  • 1 dash Black Pepper
  • 4- 1/4 ounces, weight Pitted Green Olives
  • 1 bunch Parsley
  • Lemon Wedges, Optional Garnish

    Take 7 sprats, put them in a small bowl and mash thoroughly.

    Add the butter, lemon juice and pepper and mix well.

    Stuff the olives with the sprats mixture with the help of a culinary syringe.

    Put the stuffed olives on a large plate.

    Add the rest of the sprats and decorate with parsley leaves and lemon slices.
