- Pea Hummus
- 2 cups cooked sweet peas
- 1 tablespoon tahini
- 2 cloves garlic
- 1 tablespoon olive oil
- juice half of one lemon
- 1 pinch sea salt
- 1 handful cilantro and/or mint
- Spring Toast
- 2-3 tablespoons pea hummus, recipe above
- 1 piece hearty gluten-free toast
- 1/2 avocado, sliced
- 1/4 cup sprouts of choice
- 1 pinch sea salt
- 1 dash good quality olive oil
Directions

1Place all ingredients in food processor. Blend until smooth.

2Taste for seasoning and adjust as necessary.

3Place in sealed container. Store covered in refrigerator for 2-3 days.

4Toast bread.

5Smear pea hummus over toast, then place sliced avocado on top.

6Sprinkle with sprouts and sea salt. Drizzle with olive oil and eat immediately.
