  • 1 c. marscarpone cheese
  • 3/4 c. Parmesan cheese
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 tbsp. unsalted butter
  • 1/2 tsp. kosher salt
  • 1/2 tsp. Black pepper
  • 1 lb. gemelli pasta
  • 1 lb. thin asparagus
  • 1 roasted chicken
  • 6 small plum tomatoes
  • 1 tbsp. fresh tarragon

Directions

    Bring a large pot of salted water to a boil.

    In a large heatproof serving bowl, combine marscarpone cheese, Parmesan, lemon zest, lemon juice, butter, salt, and pepper.

    Cook pasta in boiling water according to package directions, adding asparagus for the last 3 minutes.

    Place bowl with mascarpone cheese mixture over pasta pot; heat until cheeses almost melt; whisk until smooth.

    Drain pasta and asparagus; add to sauce in bowl with chicken, tomatoes, and tarragon; toss.
