  • 1 3/4 lb. acorn squash
  • 2 medium cooking apples
  • lemon juice
  • dash of ground cinnamon
  • 2 Tbsp. low or reduced calorie pancake syrup

    Preheat oven to 350°.

    Cut squash into 1/2-inch thick round slices.

    Core apples.

    Cut into 1/2-inch thick slices.

    Brush apples with lemon juice to prevent browning.

    In a 1-quart casserole dish, layer squash and apples.

    Sprinkle with cinnamon (2 tablespoons of raisins can be added, if desired).

    Bake covered at 350° for 50 minutes or until squash is tender.

    Before serving, drizzle with the 2 tablespoons syrup.
