Squash Au Gratin

  • 2 lb. yellow squash, sliced
  • 1 medium onion, chopped
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 3 Tbsp. butter
  • 1 c. cracker crumbs
  • 1 c. grated Cheddar cheese
  • 1/2 c. milk
  • 1 egg, slightly beaten

Directions

    Preheat oven to 350°.

    Cook squash and onion in water over medium heat until squash is tender, but still firm.

    Remove from heat and drain.

    Add salt, pepper and butter to squash.

    Then add cracker crumbs, half of the cheese, the milk and egg.

    Stir carefully until well blended.

    Pour mixture into a 1 1/2 to 2-quart casserole dish and sprinkle the top with remaining cheese. Cover and bake at 350° for 20 minutes.
