- 2 lb. yellow squash, sliced
- 1 medium onion, chopped
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 3 Tbsp. butter
- 1 c. cracker crumbs
- 1 c. grated Cheddar cheese
- 1/2 c. milk
- 1 egg, slightly beaten
Directions

1Preheat oven to 350°.

2Cook squash and onion in water over medium heat until squash is tender, but still firm.

3Remove from heat and drain.

4Add salt, pepper and butter to squash.

5Then add cracker crumbs, half of the cheese, the milk and egg.

6Stir carefully until well blended.

7Pour mixture into a 1 1/2 to 2-quart casserole dish and sprinkle the top with remaining cheese. Cover and bake at 350° for 20 minutes.
