Squash Bacon Casserole

Ingredients

  • 3 or 4 medium yellow or zucchini squash
  • 1/4 c. sour cream or yogurt
  • 1 Tbsp. margarine
  • 1/2 tsp. salt
  • 1/8 tsp. paprika
  • 1 egg, beaten
  • 1 Tbsp. chives
  • 3 strips bacon, fried, dried and crumbled
  • bread crumbs

Directions

    Cut squash in small pieces and simmer until tender; drain well. Combine sour cream or yogurt, butter, cheese, salt and paprika. Stir over low heat until cheese is melted.

    Remove from heat.

    Stir in egg, chives and bacon.

    Add squash.

    Place in a baking dish and cover top with bread crumbs.

    Dot with butter.

    Brown at 350°. Yield:
