Pineapple Cream Meringue Pie

  • 1 (20 oz.) can crushed pineapple
  • 1/2 c. sugar
  • 1/4 tsp. salt
  • 4 Tbsp. flour
  • 2 egg yolks
  • 1 1/2 c. milk
  • 1 tsp. vanilla
  • 2 egg whites
  • 1 (9-inch) baked pie shell

Directions

    Drain crushed pineapple.

    Mix together in bowl the sugar, salt, flour and egg yolks.

    Put milk in pan; mix in sugar flour mixture and cook, stirring constantly, until mixture comes to a boil.

    Be careful not to scorch.

    Remove from stove and cool.

    Add pineapple and vanilla.

    Put into pie shell.

    Cover with meringue made from egg whites.
