  • 2 small yellow squash slices
  • 1 medium zucchini
  • 1 large tomato, peeled and cut in wedges
  • 1 small onion, sliced and rings separated
  • 1 tsp. dried basil
  • vegetable cooking spray
  • 2 Tbsp. Parmesan cheese
  • 1/4 stick margarine

Directions

    Layer vegetables, starting with squash, then zucchini, tomatoes and onion. Sprinkle with basil. Repeat in a 1 3/4-quart casserole dish sprayed with vegetable cooking spray. Melt margarine and sprinkle over ingredients. Sprinkle with cheese. Bake at 350° for 25 to 30 minutes or until done. Makes 6 servings.
