Ingredients
- 1/2 c. bell pepper, cut fine
- 1/2 c. onion, cut fine
- 1 c. cheese, grated
- 3 Tbsp. sugar
- 1 stick oleo
- 2 lb. squash, cooked and drained
- 1 c. water chestnuts, sliced
- 1 c. mayonnaise
- Ritz crackers, crushed
Directions

1Cook squash until tender; drain and mash.

2Add cheese to squash while squash is hot.

3Add all other ingredients to squash mixture.

4If desired, saute onions and bell pepper in oleo until clear, then add to squash mixture.

5Put mixture into buttered casserole dish and top with Ritz crackers.

6Dot with butter or oil.

7Put into preheated 350° oven and bake for 30 minutes.
