Squash Casserole

Ingredients

  • 1/2 c. bell pepper, cut fine
  • 1/2 c. onion, cut fine
  • 1 c. cheese, grated
  • 3 Tbsp. sugar
  • 1 stick oleo
  • 2 lb. squash, cooked and drained
  • 1 c. water chestnuts, sliced
  • 1 c. mayonnaise
  • Ritz crackers, crushed

Directions

    Cook squash until tender; drain and mash.

    Add cheese to squash while squash is hot.

    Add all other ingredients to squash mixture.

    If desired, saute onions and bell pepper in oleo until clear, then add to squash mixture.

    Put mixture into buttered casserole dish and top with Ritz crackers.

    Dot with butter or oil.

    Put into preheated 350° oven and bake for 30 minutes.
