Squash Casserole

Ingredients

  • 2 lb. squash (yellow or zucchini)
  • 1 carrot, finely grated
  • 1 onion, finely chopped
  • 1 can cream of chicken soup
  • 1/2 pt. sour cream
  • 1 1/3 sticks margarine
  • 1 pkg. Pepperidge Farm dressing mix (herb flavored)
  • salt and pepper

Directions

    Cook chopped squash in salted water until tender.

    Drain well. Season with salt, pepper and 1/3 stick oleo.

    Add the grated carrot, onion, soup and sour cream.

    Melt 1 stick margarine in microwave.

    Add to dressing and toss.
