Squash Casserole

Ingredients

  • 3 small sausage patties
  • 2 med onions
  • 1 lb squash
  • Salt and pepper to taste
  • 2 eggs, beaten slightly
  • 1 c tomatoes
  • Cheese

Directions

    Brown the sausage patties and place on paper towels to drain and cool.

    Slice the onions and squash.
  3. 3
    Boil together in a small amount of water until done.
  4. 4
    Drain and mash, then add salt and pepper.
  5. 5
    Break up the sausage patties and mix with the eggs, tomatoes, onions and squash.

    Pour into a casserole and top with cheese.

    Bake at 350° for about 45 minutes.
