  • 2 1/2 lb. yellow squash, sliced
  • 1 large carrot, grated
  • 2 tsp. pimento, chopped
  • 1 c. cream of chicken soup
  • 1/2 pt. sour cream
  • 1/2 c. margarine
  • 8 oz. bag seasoned stuffing mix

Directions

    Boil, drain and cool squash.

    Add carrot, pimento, soup and sour cream.

    Mix well.

    Place in buttered casserole dish.

    Bake at 375° for 30 minutes.
