  • 1 c. grated carrots
  • 1 small onion, chopped
  • salt and pepper to taste
  • 1 c. sour cream
  • 1 can cream of chicken soup (not diluted)
  • 1 small jar pimentos
  • 1 stick oleo
  • 1 (8 oz.) pkg. cornbread stuffing mix
