Squash Casserole

Ingredients

  • 3 lb. yellow squash or 2 (16 oz.) pkg. frozen
  • 1/2 c. chopped onion
  • 1/2 c. corn meal
  • 1 stick margarine
  • 1 bell pepper (medium), diced
  • 1 c. cream of mushroom soup
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 c. grated cheese
  • 2 tsp. sage or poultry seasoning

Directions

    Cut up unpeeled squash.

    Cook until tender; drain and mash. Add margarine and mix well.

    Add all other ingredients.

    Mix well. Pour into casserole dish and bake at 350° for 30 to 40 minutes or until golden brown.
