  • 1 lb. yellow squash, chopped
  • 2 Tbsp. butter, melted
  • 2 eggs, slightly beaten
  • 1/2 c. cracker crumbs
  • 1/2 c. milk
  • 1/4 tsp. salt
  • 1 1/2 c. grated Velveeta cheese

Directions

    Cook squash until tender.

    Drain and mash.

    Drain again.

    Add butter, milk, salt and cheese. Pour this mixture into greased casserole dish.

    Top with cracker crumbs.

    Drizzle egg over top of this.

    Bake at 350° about 25 to 30 minutes or until done.
