Squash Casserole

  • 7 to 8 yellow summer squash
  • 1 egg
  • 1 (8 oz.) sour cream
  • salt and pepper to taste
  • 1 large onion
  • 1 can cream of mushroom soup
  • 1/2 bag Pepperidge Farm stuffing

Directions

    Slice squash and onion. Boil until tender.

    Drain.

    In a large bowl, mix soup, egg, stuffing mix, salt and pepper.

    Mix well. Add squash and fold together.

    Place in a 9 x 13-inch greased baking dish. Bake at 350° for 35 minutes.

    Cover with cheese. Bake until brown.
