  • 1 lb. squash
  • 1 medium onion, diced
  • 1 can mushroom soup
  • salt and pepper to taste
  • 2 Tbsp. butter
  • cheese
  • 1 1/2 c. cracker crumbs

Directions

    Stew squash and onions until tender enough to mash. Add salt and pepper. In 1 1/2-quart casserole, alternate layers of squash, cracker crumbs and soup. Bake at 400° until top browns. Sprinkle cheese on top.
