- 2 medium zucchini squash
- 2 medium yellow squash
- 2 large carrots, grated
- 1 can cream of mushroom soup
- 1 small (8 oz.) sour cream
- 1 pkg. (8 oz.) Pepperidge Farm stuffing mix
- 1 stick margarine
Directions

1Melt margarine in 9 x 13-inch casserole dish. Pour half of the stuffing mix over melted margarine.

2Parboil sliced squash and carrots until soft.

3Mix vegetables, sour cream and soup. Pour over stuffing mix in dish.

4Cover with remaining stuffing mix. Bake at 400° for 30 minutes.

5Can be frozen.
