  • 2 1/2 c. diced squash
  • 1 c. diced celery
  • 1 c. diced onion
  • 2/3 c. butter or margarine
  • 1 1/2 c. water
  • 2 c. cracker crumbs
  • 2 eggs, beaten
  • 1 c. grated cheese
  • salt and pepper to taste
  • 1 1/2 c. crushed corn flakes or choice of cereal

Directions

    In a pot, boil squash, celery, onions, butter and water for 5 minutes. Then combine with cracker crumbs, beaten eggs and grated cheese. Pour into lightly buttered baking dish; sprinkle on topping. Bake in 350° oven for 30 to 35 minutes.
