Squash Casserole

  • 2 lb. squash, sliced thin
  • 2 tsp. sugar
  • 1 c. chopped onions
  • 2 beaten eggs
  • 2 c. grated Cheddar cheese
  • salt and pepper to taste
  • 1/2 to 1 c. mayo
  • Ritz cracker crumbs

Directions

    Cook squash and onions in small amount of water until tender on top of stove. Drain; add sugar, eggs, mayo, salt and pepper. Pour into buttered dish. Cover with cheese, then cracker crumbs. Bake at 350° until cheese is melted.
