- 2 1/2 lb. yellow squash (6 medium size)
- 3 carrots, grated
- 1 onion, chopped
- 2 oz. pimiento
- 1 stick butter
- 1 c. sour cream
- 1 can cream of chicken soup
- 1 pkg. Pepperidge Farm stuffing mix
Directions

1Cook squash and drain.

2Melt butter and mix with stuffing, divided in half.

3Mix soup and sour cream.

4Stir in half of stuffing mix and other ingredients.

5Place in buttered baking dish.

6Spread other half of stuffing mix on top.

7Bake at 350° for 1 1/2 hours.
