Squash Casserole

Ingredients

  • 2 lb. zucchini squash
  • 1 c. chopped onions
  • 1 3/4 sticks oleo
  • 1 (10 1/2 oz.) can cream of chicken soup
  • 1/4 can water
  • 1 c. sour cream
  • 1 c. grated raw carrots
  • 1 small pkg. herb dressing mix

Directions

    Thinly slice zucchini and cook until tender, as you saute onions in 3/4 stick oleo in a large skillet.

    When zucchini is done, drain and set aside.

    When onions are golden, add can of chicken soup with water, sour cream and grated raw carrots.

    Mix well and add zucchini (drained) and stir well.

    Put 1 stick oleo in another pan; let melt and add the package of dressing mix. Coat dressing well with oleo.

    Put 1/2 of dressing mix in

    a 4-quart casserole, then pour in squash mixture.

    Top with remaining dressing.

    Bake at 350° for 30 minutes.

    Can be made day ahead and warmed to serve.
