Squash Casserole

- 2 lb. zucchini squash
- 1 c. chopped onions
- 1 3/4 sticks oleo
- 1 (10 1/2 oz.) can cream of chicken soup
- 1/4 can water
- 1 c. sour cream
- 1 c. grated raw carrots
- 1 small pkg. herb dressing mix
Directions

1Thinly slice zucchini and cook until tender, as you saute onions in 3/4 stick oleo in a large skillet.

2When zucchini is done, drain and set aside.

3When onions are golden, add can of chicken soup with water, sour cream and grated raw carrots.

4Mix well and add zucchini (drained) and stir well.

5Put 1 stick oleo in another pan; let melt and add the package of dressing mix. Coat dressing well with oleo.

6Put 1/2 of dressing mix in

7a 4-quart casserole, then pour in squash mixture.

8Top with remaining dressing.

9Bake at 350° for 30 minutes.

10Can be made day ahead and warmed to serve.
