Squash Casserole

Ingredients

  • 5 medium large fresh yellow squash or 1 pkg. frozen squash, cooked
  • 1/2 onion
  • 2 grated carrots
  • 1 can cream of chicken soup
  • 1/2 pt. sour cream
  • 1 pkg. Pepperidge Farm stuffing (8 oz.)
  • 1 stick margarine

Directions

    Melt margarine in large bowl (microwave is fine).

    Mix margarine with grated carrots.

    Microwave for about 45 seconds to 1 minute.

    Toss in stuffing until moistened.

    Set aside.

    Mix other ingredients; season lightly (salt, pepper, garlic salt).

    I cook the 1/2 onion (chopped) with the squash.

    Layer stuffing and other mixture in shallow baking dish.

    Bake at 350° for 40 minutes.

    Cover for the first 30 minutes; uncover remaining 10 minutes.
