Ingredients
- 5 medium large fresh yellow squash or 1 pkg. frozen squash, cooked
- 1/2 onion
- 2 grated carrots
- 1 can cream of chicken soup
- 1/2 pt. sour cream
- 1 pkg. Pepperidge Farm stuffing (8 oz.)
- 1 stick margarine
Directions

1Melt margarine in large bowl (microwave is fine).

2Mix margarine with grated carrots.

3Microwave for about 45 seconds to 1 minute.

4Toss in stuffing until moistened.

5Set aside.

6Mix other ingredients; season lightly (salt, pepper, garlic salt).

7I cook the 1/2 onion (chopped) with the squash.

8Layer stuffing and other mixture in shallow baking dish.

9Bake at 350° for 40 minutes.

10Cover for the first 30 minutes; uncover remaining 10 minutes.
