  • 1 lb. cooked yellow squash
  • 1 medium carrot, grated (raw)
  • 1/2 can cream of chicken soup
  • 1/2 medium onion, chopped
  • 1/2 small jar pimento, chopped
  • 1/2 c. sour cream
  • 1/2 stick margarine
  • 1/2 (8 oz.) pkg. Pepperidge Farm herb stuffing

Directions

    Mix together the first 6 ingredients.

    Combine margarine and stuffing mix with a dash of salt and pepper.

    Line casserole dish with stuffing (you can use a pastry blender to get a good consistency of mix and margarine).
